An order placed ahead is still paid at your counter. That has not changed. What changed is that the customer can now settle lines of it before arriving, out of two things they already own with you: units from a package they paid for, or a prize they earned in your programme. No card payment, no commission, no money moves.
When it is deducted
The customer taps a line and says «pay this from my package» or «pay this with my prize», and the system checks that they really hold those units or that prize at that instant. No settled order reaches you without its units already deducted: settlement happens the moment the order is placed, not at hand-over, so the kitchen starts pouring against a real payment.
Units from a package
The package must be linked to the same dish and the same option as the line. The system picks from the customer's own sets, soonest to expire first, and will draw across several sets when one is short.
A banked prize
A prize pays for one item and one only, and it has to name a dish: a choice the customer already picked, a gift from your own menu, or a rung linked to menu items.
A prize that names no dish
A completed punch card whose prize is «a free coffee» settles nothing, because «a free coffee» is the reward's wording, not a dish. The system tells the customer to redeem it at the counter, and it redeems there perfectly normally.
A partly settled order
The common case. One line on the package and two paid in cash. You charge only what is left.
